Here, at my little patch of paradise, Thing 1 eats a gluten-free diet, which means that the rest of us sometimes do as well. It’s been three years since this dietary change and we have done much experimenting with recipes to try finding the ones that work best to replace old favorites. Any of you who have also had to make the change know that this is not a simple task; especially when it comes to baking.
We’ve found that the one thing most folks, including us, gripe about with gluten-free baking is the difference in texture, “mouth feel” if you will. I want to tell you that you will not have that complaint with these cookie bars!
Pinterest is where I go when I’m looking for recipes to try, and perhaps tinker with, and thats exactly how I came across this one. A search for “gluten-free cookie bars” directed me to Michelle at My Gluten-Free Kitchen and the recipe she calls “Gluten-Free Peanut Butter Brownies”.
Now, myself, I’d call these Blondies, because if it isn’t an ooey-gooey fudgy explosion it’s just not a brownie. But don’t let that stop you! Whatever name you call them I’m sure you will agree that they are delicious. Plus the recipe is simple to make and consists of ingredients that I pretty much always have on hand. I’ve made this recipe a number of times now and the only changes my brood prefers is that I add more salt and more chocolate chips. We only use “natural” peanut butter (which is to say it’s minimally processed and doesn’t add things like palm oil) and when baking with it It doesn’t have as much salty flavor as back in the day when we used Jiff. But, it turns out that this choosy Mom now knows better than to choose peanut butter with unnecessary additives. The lessons we learn and all that. The added chocolate chips are just becase life is too short to skimp on the chocolate 😂 I also omit the xanthan gum, because I usually have Bob’s Red Mill 1:1 Gluten Free Baking Flour in the house and it’s already in the mix.
I made these babies yesterday and they are already more than half gone because everyone in the house LOVES them. Do you know what a miracle it is to cook something that is that kind of a win? Huge, folks. Huge win!
